Pizza: from humble origins to the present day
Something similar to the pizza was already being consumed in Italy during antiquity, though it was known by the Latin name panis focacius (foccaccia bread). In ancient times, it was a very poor dish – part of the cucina povera – diffuse across all regions of the Mediterranean, and made with lard, cheese and basil. It was in Naples, however, around the turn of the 18th and 19th century, that the pizza we are familiar with now was born.
Pizza as we know it arrived on the scene in 1889. The story goes that the Neapolitan chef Raffaele Esposito created the Pizza Margherita in honor of the Queen Margherita of Savoy. There was some symbolic significance behind this simple preparation; as well as being delicious the Pizza Margherita was meant to exhibit the colours of the newly introduced Italian flag: basil for green, mozzarella for white and tomato for red.
It wasn’t until the end of the Second World War that the first pizzerias opened in Northern Italy, and it was around this time and the mass exodus of Italian immigrants to America that the humble pizza found favour abroad.
